Raw Energy Salad

If you’re looking for a salad you can make all the time, this is the one. Packed full of great flavours and textures, this salad is super healthy and easy to assemble! 

1-2 Beetroots
2-4 Carrots
¼-1/2 Cup Raisins (they make a significant difference to the salad)
Handful of Sunflower Seeds (optional)
Handful of finally chopped Parsley (optional)

-Olive Oil
-Apple Cider Vinegar- Use a little at a time as can be overpowering if you use too much.

Adapt the number of beetroot and carrots (leave skin on as there as it has high nutritional value) used depending on your serving size.

Not many of each can make a decent serving but it always can be used for the next days lunch too.

Grate beetroot and carrots. Mix in a medium to large bowl.

Add raisins, sunflower seeds, parsley and your choice of dressing and mix.
